Duo of Dips Part 2 - Guacamole

Sorry it took so long, but I have not been feeling so great. Now I am getting a break in this depression it is time to get catch up on some blog posts.
Up next we have the second part to my Duo of Dips.  This recipe is for a basic but delicious guacamole! I used this to top my chicken nachos which will finally be posted next week! Yay!  Talk about crazy buildup! Trust me they were delicious! ,



Guacamole2 ripe avacados medium pitted (reserve seed) and diced½ cup pico de gallo (see below)1-2 tbsp lime juice1 tbsp of cilantro1 jalapeno, seeded and dicedsalt and pepper to taste
Takes .5 hour, serves 2-4 people.
Mix all ingredients to a bowl and sure to combineServe immediately. If not serving right away, add pits back to the mixture. Press plastic wrap to the surface and refrigerate up to 4 hours.

Duo of Dips: Part 1 - Pico de Gallo

Together with guacamole, they are toppings for my Chicken Nachos recipe which will be posted soon.


First up is the Pico de Gallo, a super simple dip made from fresh tomatoes, red onion, cilantro, jalapeno, and lime juice.  When trying to turn my process into a recipe I realized, while it is very easy to make it is not as easy to turn into an actual method.  This due to difference yields and flavors you get from the limes and tomato respectively. 

Pico De Gallo6 medium Roma tomatoes, seeded and diced2 jalapenos (or serranos if you want more heat), seeded and diced1 small red onion, finely chopped1 tbsp vegetable oil2-4 tbsp of fresh lime juice (2-4 limes)2-4 tbsp of cilantroSalt and pepper to tasteTakes .5 hour, serves 4-6 people.
Mix all ingredients to a bowl and sure to combineCover and refrigerated for at least one hour to allow flavors to develop.
