Duo of Dips Guacamole – Part 2

This creamy, delicious avocado-based dip is a blessing from Mexico.

Up next is my Duo of Dips: Guacamole! My apologies for the delay! This blog does revolve around mental health, and mine was not up to par. However, I am getting a break from my depression symptoms. Therefore it is a perfect time to get caught up on some blog posts!

This guacamole recipe is simple yet, classic and guacamole!  Feel free to experiment with it and add your own twist.

I used this to top my chicken nachos which will finally be posted next week! Those nachos were so crazy!  I can’t wait to share them with you!

Duo of Dips Guacamole – Part 2

This creamy, delicious avocado-based dip is a blessing from Mexico.

Ingredients

  • 2 ripe avocados medium, diced
  • ½ cup pico de gallo see below
  • 2-3 tbsp lime juice fresh
  • 1 jalapeno seeded and minced
  • salt and pepper to taste

Instructions

  • Mix all ingredients in a bowl stir to combine.
  • Serve immediately. If not serving right away, press plastic wrap to the surface and refrigerate for up to 4 hours.

Notes

Use a serrano chile instead of jalapeno for extra heat.
For a tomato version, skip the pico, but add 1 garlic clove, 2-4 tbsp of cilantro, more lime to taste.

Duo of Dips: Pico de Gallo – Part 1

Pico De Gallo is one of the most versatile condiments around. It is good alone, on fish, chicken and so much more.

Together with guacamole, they are toppings for my Chicken Nachos recipe which will be posted soon. 

Pico de Gallo, a super simple dip made from fresh tomatoes, red onion, cilantro, jalapeno, and lime juice.  When trying to turn my process into a recipe I realized, while it is very easy to make it, it is not as easy to turn into an actual method.  This due to the different yields and flavors you get from the limes and tomato respectively.

Equipment

  • Sharp Knife
  • Mixing spoon
  • citrus press or reamer
  • mixing bowl
  • plastic wrap or lid for bowl

Ingredients

  • 6 each Roma tomatoes medium, seeded, and diced
  • 2 each jalapeno seeded and minced (see notes)
  • 1 each red onion small
  • 4 tbsp lime juice fresh
  • ¼ cup cilantro finely chopped
  • 2 each garlic large, minced
  • .5 tsp kosher salt
  • .25 tsp black pepper freshly ground

Instructions

  • Combine all ingredients in a bowl and stir together
  • Cover and refrigerate for at least an hour to allow flavors to develop

Notes

If you desire a spicier pico, use serranos instead of jalapenos.
