Finally we have an almost perfect Chicken & Sausage Gumbo! This is the third time I have made this recipe from Food Network by Emeril. It is actually a combination of this and this recipe by him. When I say it was a journey to make this gumbo for the third time, I would not be exaggerating one bit!
Roasting an entire chicken for one can be a bit too much . This even more true now that I have had the gastric sleeve surgery. This is one of the reasons I always keep a bone-in skin on chicken breast in the freezer.
